Hi everyone, I’m Mara. A job as a biomedical engineer and a great passion for sourdough and leavening in general. Since 2018, this passion has become a reality and I opened with my husband Matteo, our handmade bakery. ⠀⠀⠀⠀⠀⠀⠀⠀

The bread you find at the Giardino del Pane is made from live sourdough. We have chosen to return to bread as it used to be, with 2 leavening times and long preparation times.

The bread you find at the Giardino del Pane is made from live sourdough. We have chosen to return to bread as it used to be, with 2 leavening times and long preparation times.

Why this choice?

  • because we love the characteristic taste of sourdough;

  • because the long leavening time makes the products digestible and very aromatic;

  • because the resulting bread keeps longer.

In our laboratory we use the highest quality flours, semi-integral and wholemeal, which are not very refined, stone-ground and produced from organic Italian grains. We have chosen these flours with care because they go perfectly with the slow rising of sourdough. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

For our bread, time is of the essence, a time that passes slowly, to obtain a more digestible bread, with excellent organoleptic characteristics, a beautiful alveolation and a fragrant crust.⠀⠀⠀⠀⠀⠀⠀⠀⠀
